Evidence of self employment for EEA3 application

Hello, I would be very grateful if anyone could help.

I am a non-EEA citizen and my husband an EEA citizen. We have lived in the UK for over 5 years and recently applied for EEA4 and EEA3 respectively but our application was returned with a letter telling us to make a fresh application with "a complete dossier of supporting evidence" that my EEA husband was working for a continuous period of 5 years.

He was employed by 2 different companies for a total period of about 2.5 years and self-employed (freelancing) for the remaining 2.5 years. We supplied P60 and payslips when he was employed, but as evidence of self-employment we only supplied 4 sets of bank statements where you can see income coming in, and the Contract of a project he was working on although there were no dates or signatures (the company he was working for did not sign or date it properly at the time.) Those documents roughly covered the 2.5 years and we did not think they would be that strict.. plus he accidentally destroyed all the old documents, which is why we were unable to supply full evidence.

So now we are trying to gather more paperwork, but we are worried that he was working on and off while he was freelancing, so there are gaps of weeks or sometimes a few months. If we were to provide bank statements you can only see money coming in every month or few months, so I guess you can reasonably assume that he was working, regardless of the duration. With income tax statement it is a record for a whole year. Would HO be satisfied with such evidence? He never received any public fund so maybe we can show that we were self sufficient at the same time?

Thank you for reading this so far. At the moment we are looking to provide the following as evidence of self employment (and self sufficiency as well I guess):

1. My husband's bank accounts for the periods when he was self employed. (We'll have to ask our bank to send copies)

2. HMRC self assessment statement (will printouts from the HMRC website be sufficient or can we get the original from HMRC?)

3. Our saving account's details to show we had sufficient funds to support ourselves.

4. My husband's CV to outline his work experience and skills.

Could anyone advise if the above would be enough to satisfy them this time?

I am about to apply for EEA3 under similar circumstances... it would be great to hear about any developments in your application. Was it successful? Did you manage to gather all the right documents?
