fiance visa issues

Im British and my fiance is Chilean. We wish to get married next May and settle here. However i have been looking into the fiance visa and we must show proof of bookings for the weddings but i am reluctant to book and pay deposits due to expense until we know the visa will be granted and without delays. If we were to have the wedding at a later date to allow time for the visa to come through then my partner would not be able to work and support me and our child as I would no longer be entitle to public funds. I do have a job but its not enough on its own to support all 3 of us.

Any advice appreciated. Im getting fairly stressed about the whole situation as its difficult enough raising our child alone with my partner on a different continent without feeling its an imposible dream we'll ever be together as a family!
