VAF4 Spousal Visa. Student Status and Bank Statements

I (UK citizen) am the sponsor for my wife (Canadian citizen, US resident) who is making an online VAF4 application. Three questions with which I would really appreciate your help:

1) I (sponsor) have accepted a job to start in two months but my current status is a full-time student. I am including my accepted job offer, letter from employer, etc in the Additional Info and Supporting Documents. In the section "Sponsor's Financial Details", on the paper version of the VAF4, it instructs me to write "Student" and give my university details as employer's details. However, we are filling in the online form, and there is no "Student" option! Just Full-Time Employment, Part-Time Employment or Unemployed. Should I put "Full-Time Employed" and give my university details or "Unemployed" and explain my student status in the Additional Info? I'm worried they'll see "Unemployed" and run a mile.

2) I (sponsor) don't receive paper statements from my bank (HSBC) but got the branch to print me some out. They look kind of like they've been printed off the internet even though they haven't and are totally official. Will the UKBA recognise these as valid or has anyone had any bad experiences with this?

3) My wife (applicant) has quite a few fields where she needs to add a lot more than the allowed character space. Is this quite straightforward once we get the print application? Do we get a Word document or will we need to write stuff in by hand, attach sheets or something? Any insight from previous applicants on this appreciated.
