NZ: work experience evidence

My partner and I hope to move to New Zealand for a couple of years on a temporary work visa under the essential skills policy.

My boyfriend is a builder with 5 years experience, but no formal qualifications. He will have to submit evidence of his experience, but what form should this take? The London branch of immigration New Zealand says: "the work experience could be previous job contracts, letters of reference, pay slips with your job title etc".

He's not very good with paper work and hasn't kept old contracts or payslips. He could get references but would this be enough? If it's not enough is the application rejected automatically, or do the immigration authorities contact us for more info?
