Bank statements - to show or not to show??

Hi

My sister will be applying for a 5 year visa to the uk. I will be sponsoring her visit and expenses. She has been to the UK once last year and another time 15 years ago. She has also been to Turkey twice in the last 2 years.

She is unemployed. Her husband has his own businesses. As part of her application she will be showing 3 years of his tax statements and business ownership documents. Previously she has included his bank statements too as proof of his income (i.e. self employed but showing he is getting income from his business). The problem is that there are some large transactions going in and out his account this time. The bank statement will only be used to evidence his income further (but could just use the tax statements?). Should she just not include this just in case the officer looks at the statement and rejects the application on the basis of the unknown transactions eventhough it would clearly be mentioned in the supporting letter that the bank statement is only included for the purpose of evidencing income.
