To put
CR001's answer in another way, if your underlying job comes to an end, a visa longer than 60 days is curtailed down to 60 days. A visa shorter than 60 days is allowed to lapse naturally.
So you get either 60 days or the remaining days on your visa, whichever is shorter.

Yes.
If the new sponsor application is rejected before the end of your existing visa, your current visa still remains valid till its last day.
If the new application is made before the expiry of your existing visa and it is not decided before your current visa has expired, your current visa is automatically extended (Section 3c Leave) until a decision is taken.

It is the school summer holidays now. I would suggest that now would be a good time to send the children to stay with grandparents/relatives in your/your spouse's country of habitual residence. That would give you maximum flexibility if you had to leave quickly.
