Make sure you carry printouts of the embassy web pages. And go early to the airport so that you have lots of time to deal with the Wizz people if there is any problems.

Well, your son has a legal right to travel in the EU as a Polish citizen even if his passport has expired. And he also has a right to travel with you as a Ugandan citizen, since you have been working (also known as "exercising your treaty rights") in the UK.
Be very sure to carry your marriage certificate and your child's long-form birth certificate with you when you travel! Very important! Also worth printing out and reading
