I'm currently only earning £11,500 p/a (terrible I know) but a family member has offered to gift me £30k. Once this is in my account, and I add my own savings to hit £33,750. Am I correct in thinking after 6 months from this point I'd meet the Sponsor Financial Requirements? I just don't want to be missing any obvious problems.
Your calculation is correct but read Appendices FM and FM-SE for the detailed requirements. Note that your wife's savings can also be taken into account. If you decided to rely on savings rather than take a second job then you may find it easier to visit her in Montenegro, however, IMHO a visit visa re-application on human rights grounds succeeding is not beyond the realms of possibility. Btw - Tirana is a 3 hour bus ride from Podgorica.
The additional job offer I received was for full time but to start with not a permanent contract (with apparently a high possibility of it being permanent in the future) which would mean cutting down my hours at the job I've had for several years and in doing so would ruin the chances of this savings route if the new job offer decided not to keep me for 6+months.

So I'm at a bit of a crossroads. Risk the job and apply via earnings route and be in better employment when she get's here, but of course if during the 6 months the new job get's rid of me I'll be earning even less than I am now and being gifted £30k won't help. Or keep my current employment, have the £30k in the bank and still look for additional work but know that within 6 months we will be eligible to apply.

Also the visiting visa she applied for was a year one, so I think if she applies for a 6 month re-appeal one then they might get 'suspicious' as to why she has now decided to reduce the possible Visa time.

Thank you for the advice by the way, this forum has been more helpful than any website or lawyer etc.

I doubt if this would make a difference. Civil servants make their decisions according to the rules in force. In her previous visitor visa application your wife did not explicitly state that it was a human rights claim:

A one year visa (and 2,5 or 10 year) are still only valid for six month visits in every 12 max, she won't be able to stay one year in UK on it.
