Working and traveling in the EU

I have a question of a more general kind, but it is still specific enough I think to be posted here. I am am British citizen and I intend to do a trip through Europe. But I do not simply want to travel, since I have to earn some money "on the way" so to speak. I think it is possible to work in the EU without much bureaucracy, but I wonder how much preparation it still requires to get a job in a foreign country? I am talking of jobs in the service sector (I am a trained cook and bar keeper).
The countries I intend to visit are Germany, Switzerland (interesting as it is not EU), Italy, Portugal and maybe the Netherlands.

Obviously you need to prepare CV and register with job center there.
