EEA1&2 - Self Sufficient

What document do i have to provide as proof of self sufficency?

My wife got EEA FP to UK Oct 2013 (arrived UK in Oct 2013), and i am currently working in Ireland but residing in the UK (border towns). We are looking for the fastest way for her to apply for EEA2. I have money in irish bank account sufficient for the two of us. Has anybody used the self sufficent route? How straight forward was it? Thanks
