If you don't declare the relationship in the application you face the following issues:
1. If your girlfriend is questioned by the Immigration Officer at UKVI Border Control and it's found that she is in a relationship with someone in the UK and this hasn't been disclosed in her application, she could be refused entry. IO's are experience in asking the right questions to uncover the truth.
2. If later on you want to submit an application for her to join you in the UK for settlement you will be required to provide evidence of a genuine relationship and how long this has been in existence. By not mentioning it in a visitor visa application you may be digging yourself into a deep hole in the future.
All information submitted in previous applications is held on the UKVI for cross-matching with subsequent statements.
