NI contributions and tax

My wife is applying for British citizenship AN1 Form. My query is about NI contributions and tax. Since she has been been here she has never paid NI contributions only 1 or 2 when her part time job monthly wage was enough to pay it which was a low amount anyway. She has never paid tax.because her annual salary is only £6500 a year. When she first arrived she registered for self employment but learnt so little £1000 a year she gave it up . She did fill in self assessment for those years but no tax paid. When she ended self assessment we asked HMRC for a letter which they sent saying we don't need to self assessment anymore. How do we prove we have discharged my wife's obligations to HMRC? We can get her present employer to write a letter to say she is an employee? A little help would be appreciated.
