I have two full time employees. I applied for extension in June 2016 & haven't heard anything yet.

I want to know can I discontinue 1 employee while my extension is in progress?

IF I get extension can I carry on with one employee for 2 years to satisfy HO requirement?

You should decide based on your business needs.

You are not required to keep the employees for the sake of your application.

And yes, if your original application was before April 2014, you can have one employee for 2 years to meet your 2nd extension/ILR requirement.
