[EDITED] I have checked your question again and the answer is yes... that via the Immigration stamps (in and out) and also via your wife's HO approval letters you can prove her 5 years legal stay in UK.
However, you will then have to show the proof of cohabitation for your wife....This is what we had provided for cohabitation proofs:
1. Joint bank account statements
2. Any NHS letters in wife's name
3. Council Tax letters
4. Voter registration letters (my letter stapled with my wife's letter)
5. Reference letter from registered GP (you need to pay for this letter.. check at your GP's office)
6. Utility bills (Gas, mobile, electricity, broadband e.t.c.)
7. Rental Agreement
Even if you don't have any joint bank account, you can add your wife to your account and request a statement covering maximum period (some banks allow only for a period upto 2 years)..... you will then see your wife's name on the bank statement which can be used as proof of cohabitation e.t.c.
3-4 letters/year in any combination from the list above covering 5 years should suffice.
