Switching to Tier2

Entered UK on Tier4 (student) visa - Feb13 2013.
Visa period (Feb13 2013 - May30 2016)

First Extension on Tier4 (Student) Visa again - May19 2016.
Visa Period (May19 2016 - Oct09 2017)

Second Extension on EEA Regulations (Extended family member) submitted on Oct07 2017. Application Rejected on Oct26 2017 due to Missing documents or Evidence. No time frame provided when to make new application. However, I submitted my New Application on 28th day since rejection.

New Application submitted on EEA Regulations (Extended family member) Nov23 2017, which is accepted and Considered. No Bio metrics have been requested by Home Office yet.
Now I have been offered a job by an Sponsor and have signed the Contract already- Company is ready to do all the paperwork and hire me.

My question is Would that be wise to vary my application and switch to Tier2 or Continue with my same application?
What could be the possible chances to get Tier2 visa ?
Is that Possible to keep both the applications parallel?

What is your relationship to your EU sponsor? What documents/evidence did you fail to submit?

You do realise that as an extended family member application, you have no Section 3C protection and therefore currently have no valid leave to remain.

Your choice and depends how strong your evidence on the EEA route is and what your relationship to your EU sponsor is, i.e. unmarried partner or uncle etc. You cannot switch to Tier 2 as far as I understand as you have no leave to remain. You will need to apply from home country and meet all the requirements.
What could be the possible chances to get Tier2 visa ?
If you meet the requirements and the company has completed the full and proper RLMT process etc, then there shouldn't be a problem.
Is that Possible to keep both the applications parallel?
They are two different routes under two different rules and different departments.
