I still have my job and responsibilities here that I need to deal with. Would a Letter from my current employer not suffice?
Probably not enough. You could try, but be prepared to be refused a visitor visa to visit your 'settled' husband in the UK. HO scrutinise visitor visas heavily now, not as easy to get as a few years ago.

That is understandable I suppose. If I can find work there, as anything then would it be easy to convert from a work visa after that expires and my husband has met the requirements to a Spousal visa?

Easy to change to a spouse visa. Much harder to get a Tier 2 General work permit though. What is your job that you do now??

Unlikely you will qualify for tier 2 sponsorship as you need to be NQF level 6 and a minimum salary of £30k per annum and any company willing to sponsor you, must complete the mandatory Resident Labour Market Test to prove to home office that there is no British/EU citizen or permanent resident who can do the job.

You could of course move with hubby to another EU state and he works there exercising treaty rights and then use the Surinder Singh route (google it) back to the UK after a number of months in AN other EU state.

Substantially cheaper (you also don't need a visa to enter Ireland for example).

However, with Brexit, time is running out.
