Non EU Spouse of British Citizen in Ireland refusal

We arrived in Ireland on 1st August 2017, made the application for a EU4FAM Card based on my rights of movement in the EU state etc..
I registered a company in Ireland, became self employed, but the business took time getting off the ground, and they kept asking for sales receipts and company bank statements, in the meantime I also got employed and provided them with my work contract and my first months payslip.
My wife the Non EU citizen, got a temporary registration card and got employed in a good job, which basically supports us while my company is trying to get off the ground.
We have a 9 year old son together, who holds dual nationality, but is English and has a British Passport, due to the constant demand for extra paperwork and invoices, which I could not provide, we also made a second application for the mother of an EU citizen, which requires she can support him and herself.
They contacted us and asked which application we wanted to go forward with, and we told them the one which will be successful, so they (In writing) recommended we stick with the original application and they would keep the second application jointly in the same file.
We received the refusal letter today, with 15 days to appeal, what I would like to know is that on the form for the appeal, it asks for legal reasons why the decision was wrong.
Do we go with the Mother of an EU citizen child application, or do we try to prove that as the EU citizen, I have access to the funds from both myself and my wife's income, which is enough to support us all in Ireland.
My wife is still working , and if we appeal, can we ask for an extension to her temporary stamp4 card, so she can continue working ?
We are in a bit of a panic, so any suggestions on how to deal with this, greatly received !

What was the reason for refusal?

They refused because we didn't supply sales invoices for my Self Employment, although we did provide a contract for services we signed, which they didn't accept because the income hadn't started yet.
The main point is that we made subsequent applications for the Mother of an EU Citizen child on the basis that my wife the Non EU SPouse, is the main breadwinner, and the EU child and myself are dependent on her income.
They wrote to us asking which one we wanted to proceed with and we replied, saying that if there was a likelihood that her original application, where she is dependent on my employment status would fail, we would take the second option, but what would they recommend, they replied advising us to stick with the original application, and then subsequently refused it, so they gave us misleading advice, and now we are left to appeal.
But the question is, can we hold them responsible for the misleading advice as our argument for the refusal?
I have made every effort to gain employment and support my family, which has started to fall in place, just too late for their time frame, and my wife is a senior manager with a blue chip company and has an income that can support us all.
