EU Work Permits/Visas?

I am an American citizen seeking information on Work Permits/Visas in the EU. I realize that the rules vary for each country. The countries of interest are France, Germany, and Spain. My field of expertise is wine making so I would only require a permit/visa for a few months. I have read up on the subject but would like some input from someone who has gone through the process. Thanks.

For those three countries u'd need to sponsored by an employer as far as I know but I beleive there is a scheme for US citz to work freelance in Germany for 90 days, tho I can't quote an url!
