60 days unemployed period

Hi all,
Thanks in advance for your guidance and advice. My details as below:
Switching from TIER 2 General to ILR
First Visa issue date - 27 Feb 2015
First arrival date - 17 may 2015
Employer 1 last working date - 12 Nov 2015
Employer 2 joining date - 11 January 2016
Employer 2 last working date - 12 January 2018
Employer 3 joining date - 19 Feb 2018 and still continues...

1. Will I be eligible to apply ILR based on my Visa issue date ? Is it too early to apply now ? Although I have a valid Visa until February 2021

2. I had 60 unemployed days between my Employers 1 & 2.
And 38 unemployed days between Employers 2 & 3.
And I travelled to India from 12 December 2015 to 6 January 2016 (25 days) during my unemployed days.
Also I am unsure about the taxes paid during those unemployment days. Please advise if this becomes a problem for me.

3. So what documents should I need to submit for my absence on the unemployed days?

I really appreciate your help here.

A gap in employment is not an issue. No need for a letter of absence during the gap

Thanks Zimba, Based on my dates, Can you please advice if I can apply now or should I wait 2 more months?

Ilr qualifying period is based on the initial visa issue and valid from date!
