Hello, in applying for ILR-spouse 5-year route for Cohabitation we need to provide 8 documents going past 2 years right/Since we got the last BRP? I was wondering what would happen if we moved house during that period.
so we lived in rented accommodation for 14 months after I got my last BRP and then moved to a new place where we have been living for the previous 10 months.

2 years evidence of cohabitation, counting backwards from the date you apply for ILR. You simply provide evidence you have from both addresses.

But do I send 8 of each address or 8 total and it has a condition that the cohabitation documents must be from different sources?
Also, I have council tax, water bill, NHS letter, and utilities. does the poll card count as a different source since it's from the council as well?

You need to send a selection of proof, between 3 and 6 sources, spread evenly for every 3 to 4 months.
It doesn't matter how long you have lived in a property, simply submit the evidence evenly spaced out from multiple sources.
Any evidence can be used.
