Do you have any knowledge about how this will work out as I read in the from the sponsor can submit the document also in the UK and biometrics can in India?

The vignette is valid for 30 days and within those 30 days, you must travel to the UK and collect your BRP. In the approval letter is stated that your vignette must be valid at the time you collect it. Home Office will tell you when the BRP will be issued and when you can go and collect it.
To answer your question, I will copy here what my letter says:
For priority applications, it's between 6-8 weeks. For standard, up to 12 weeks.

My wife submitted the documents and provided the biometrics on 9th October at VFS New Delhi. We received the below confirmation today about passport collection.
We opted for the passport collection at VFS centre New Delhi, but the below email mentions the passport was received at the UK centre?

The processed visa application for GWF reference number - xxxx xxxxxxx was received at the UK Visa Application Centre on 11/7/2019
If a courier service was purchased from VFS Global, your processed application will be delivered to the chosen address.
If not, your documents can be collected during the designated passport collection times.
