I think you should try to get ILR. You do not need to prove much in the ILR process. As long as you visit the UK and do not stay away for more than 24 months, ILR status will be maintained. I suggest applying for ILR

You can apply for the Global Talent visa at the same time as you apply for endorsement, or after you have the endorsement confirmed. If you answer yes to 'Do you have any other reasons to stay in the UK', the system will ask you to provide evidence for this and this is the source of your confusion. Ignore this as you do not need to provide any evidence for 'other' reasons to stay in the UK

Technically there is no difference at all. You may apply earlier or you all can apply together later on. The fees will be the same in total. Only your ILR will be delayed

2. There is no need for your wife to naturalise at all. Your wife may apply to naturalise later if she wishes.
