Yes. There is no such thing as a priority appointment. Priority visa service determines the visa processing speed AFTER you enrol your biometrics :!:

1. Nothing happens to her visa. She can remain under that visa route or even extend her visa
2. You are free to do what you want as you are not a sponsored employee now. That is the whole point of getting ILR

There was no difference between the visa types of dependants under PBS routes. They were all granted visas under PBS dependent rules. You can count all the time spent under the PBS dependent route towards ILR. You all should apply together

You are only allowed to work up to 20 hours a week in another job or for your own business, as long as you’re still doing the job you’re being sponsored for. If you worked against the conditions of your visa, then your ILR could be refused

Do you think it is worth writing to globaltalentvisa@ukri.org. for confirmation or to check if my endorsement is active? or that would open a pandora's box?
You need to check this with the endorsing body.

Re: ILR for global talent: not working in endorsed field.

No visa is rendered invalid as a side effect unless your visa is curtailed or cancelled by the UKVI. If you are no longer endorsed, then you simply will not be able to get ILR or extend your visa under this route

For some reason, they may not have seen the URN, so you better supply this again. For tests taken on or after 6 April 2015, applicants do not need to supply any evidence of the English language test - instead they must provide a unique reference number (URN). https://assets.publishing.service.gov.uk...
