Your documents must cover 2 years, either in joint name or individual name at same address, roughly docs for every 4 months.

What about the English Language Level B1 requirement?

You don't need personal letters or photos of you together.

Photocopies are required/preferred.

You don't need a letter.

You need to fill form Set(LR) and submit the following :

Completed form
Passports covering the full 10 years
Biometric permit if you have one
LIUK test certificate
English Language B1 level requirement

If English level B1 and LIUK is not met, your spouse will not be granted ILR. If you have met the requirements, you will be fine and should get ILR. As Casa has advised, you can apply now for naturalisation as spouse of British Citizen based on 3 years residence. This would be the most sensible way to go as you would then be free to travel between France and the UK without worrying about your ILR status.
