Her occupation is whatever her job title is at her job. The Home Office isn't concerned with the type of contract (e.g. casual, permanent, full-time, etc.). You just need to disclose what she does for a living/her occupation.

They are signing that they have known you for 3 years. If they sign the form and provide false information then they risk criminal penalties (e.g. fine and imprisonment).

I found the NCS person I dealt with was very knowledgeable and what she didn't know, she asked UKBA. That being said, it sounds like this person is told what to tell people to bring. She might not be the NCS person who checks your application. So, book the appointment and show up with the documents ...

She will need to explain that she has done LIUK for the purposes of settlement, but that PEO did not return the documents to her, and request that the case officer look up the details on their systems. We're 12 days into February. Why wouldn't they be working their way through January applications? In order to issue approvals, they need to carry out their checks including verifying referees, etc.
