Which visa? Indian girlfriend living in Dubai wants to visit UK

I have an Indian girlfriend that is currently living and working in Dubai. We have been in a relationship for more than 6 months, 2 months at the start of the relationship we were both in the UK. Last year she was studying in the UK at a university whilst on an education VISA. She would like to come for a short holiday to visit me in the UK for roughly 8 days, starting from the end of July 2019.

I would like to know which VISA my girlfriend will need in order to visit the UK and whether it would be feasible for her to come.

Will a visitor VISA be enough and will the priority service that promises 5 working days processing time be ok?
