The most recent HM Revenue & Customs Self Assessment Statement of Account. If not what you have and explain that you have not received the required document yet as your company if newly started.

Section 5 Referees: My 1st referee is “University Friend” and director of Ltd Company (not British citizen) and 2nd referee is “Ex-colleague” Electrical Engineer and British Citizen.

Providing they meet the other requirements - have known you for at least 3 years etc. that should be fine.
