What is the date of your application? (Applying by post or courier from inside the UK)
If you send your application form and application fee by post, the date of application is the date of posting. This is decided by the postmark. If the postmark is illegible or missing, the date of postage is taken as being at least 1 day before it is received by us.

If you send your application form and application fee by courier, the date of application is the date when it is delivered to our payment handling service.

..that 1 day - is it a working day? say for example in my case if they receive it on Monday, will they take it as Sunday or Saturday or Friday?

I believe it's a working day. Not sure if they take Saturday in to the account though.
Safest way is to send via recorded post (in that case they consider day of postage). As long as you post your application before expiry you're good. Please make sure you keep the proof of postage.

Make sure that it's a valid application, with the up-to-date form. Keep copies of everything sent, together with proof of posting.
