Has she collected benefits for 3 years? If so, she is not eligible to sponsor you. It would be best if she could get a job/become self-employed/become self-sufficient (no benefits and holding medical insurance)/student (holding medical insurance)

I know it will be hard for her but that's one of the ways she can sponsor you. Also, she could think about doing some kind of online business, i.e. register as self-employed. This would also work but it's not so easy to prove. She could work for about 15 hours per week. That would be fine. Otherwise, it won't be easy for you to get to the UK.

Maybe it will be better when her son goes to school - then she would be able to work.

Oh...she probably already has British PR if she has worked in the UK (Northern Ireland) for 5 years. Therefore it probably won't be a problem. I think that things become easier when she becomes a permanent resident of the UK (which she probably is now).

I'm not really sure how it works but I hope that someone else will come along and tell you what should happen.

Working is always the easiest way. However, there is something about having PR already...I'm not sure what it is but if she could work then you wouldn't have to worry about anything.

Don't know what you mean by 'visa folder' but having a job is always good.

Let's see what other people say about the PR thing.
