Tier 2- Premium application

Hi All,
I am trying to book an appointment to get my Tier 2 (General) visa extended. I want an appointment in the last two weeks of January as my new job starts in February. I have been checking on the Home Office website since the last 1 week and it keeps saying there are not appoinment for the whole of January. I have tried changing the date range from 1 dec to todays date and yet no appointment are available anywhere in the country.
Does anyone else have a similar experience and would like to share here please as to what they did? Am I looking too early and should wait a bit longer? If so then when should I start looking?
Should I apporach a lawyer? Can they get an appointment through a different booking process?
Should I just give up and send my application through post? Is there a possibility that the Home Office suspends appoinments during the christmas/ new year period?
Would be very grateful if someone could guide me!

When do you think I should start looking for an appointment if I want an appointment for last two weeks for January? At the moment the Home Office website does allow me to search for appointments till 11th February!
