Help: Filling VAF4A Appendix 2

Hi there, I need some help filling out the financial requirements on VA4FA Appendix 2. Any advice greaty appreciated...
Background: I am UK citizen living abroad, married to a foreigner in the UK. We have since been living abroad for 5+ years.

At 3.2
We have 2 children together, both Biritish passport holders one born in UK the other born abroad. I have received conflicting information if these 2 children count as dependents at 3.2. Can anyone confirm?

At 3.39 - 3.44
I have been in full-time employment abroad, well above financial requirement threshold and can prove previous 6 months pay slips. When we return to UK I will initially be self-employed with a view to setting up my own company. I already have a contract that would put me above the minimum requirement, however the form seems only interested in full-time, salaried job offers. What is the best way to communciate my future employment in the application form in the section 3.39-3.44?
