Which VFS centre to use? Any?

I am a UK citizen and arranging for my wife (Indian citizen) to apply to come and live with me. On the VFS website it says that you should use an application centre that is in your home state or close to it. Is this mandatory? Or can any VFS application centre in the country be used? My wife is based in Mumbai but we are taking a holiday in Delhi so I thought it would be most convenient if she attends they Delhi application centre. However, after her interview date would she need to return to the application centre for any reason? If so, perhaps it would be best for her to attend the Mumbai centre because travelling back and forth to Delhi is inconvenient.
Any advice please?
