Chinese passport for newborn in UK

Hi,
I am British, my wife is Chinese (not settled in the UK) and we both live in the UK. My wife recently gave birth in the UK and we are now considering to get our newborn son a Chinese passport.

Has anyone done this as well? What was the procedure to obtain this passport.

After some reading we think we should get a letter that states our son renounces his British citizenship. Is this correct?

After obtaining the Chinese passport, what do you do? Do we need a visa for out baby to stay in the UK?

If anyone has walked this path, please feel free to share your knowledge.
