Do you appreciate that getting the Residence Card can take up to 6 months! So clearly that is not going to happen in the next couple of weeks. Why have you left this so late?Should he renew his permit before we will go on holiday

I have justed checked, South Africans are not visa nationals, that is, they do not need a visa to enter the UK. The importance of that is that the check-in person at the airport in Lithuania will not refuse to check him in when you two are at the airport about to fly back to the UK.
OK, what to do. Make an application on form EEA2 now ..... get it in the post today if possible .... but do not enclose the actual passports, but merely photocopies of the name/pic pages and any relevant visa or sticker. Enclose a letter saying that the passports are needed for travel in the near future. You can download the form EEA2 by clicking here.
Before you post the application, but after that page is completed, take a photocopy of page 5 of 15 ..... the first "real" page of the form. Take that photocopy with you when you travel to Lithuania.
After submitting the EEA2 form, your husband should get back an acknowledgment letter, which will confirm his continuing ability to work while they deal with the application. If that letter arrives in time, take a photocopy of that as well when you travel to Lithuania.
Expect a bit of hassle on arrival back in the UK. Do produce the photocopies mentioned above. But there is no reason for him not to be let in. This is because of the way the EU regulations, that came into force on 30.04.06, are worded. That is, the Residence Card, when issued, is merely confirmatory, it does not actually give more rights. In other words, the EU rights are possessed by him even without the Residence Card being issued.
Have a good holiday ..... but now ... get form-filling!
A further thought .... you! Are you still registered on the WRS ..... or have you got a Residence Permit? If still on WRS, forget the EEA2 mentioned above and instead your husband should complete a form FMRS.
