Traveling abroad - EEA PR // Surinder Singh

Hi all,
I'm applying for an EEA PR (16/04/2018 when we sent all documents to be more precise). I'm a non EEA national and my husband is a UK citizen, so we are taking the Surinder Singh route as we lived for a few years in Belgium, before moving to the UK.
We had our passports returned after requesting online but my EEA2 expires May 19, 2018 (4 days from now).
If we wanted to travel abroad, while I still don't have my PR card (and hopefully will have it in a couple of month's time), should I:
- apply for an EEA FP while overseas?
- fly back to the UK showing supporting documents (yes, sounds risky);
- not go anywhere :(

Any help would be much appreciated!
