If I'm on a tier 2 visa right now and will resign from work, and get another employer for another tier 2.
However, the job with the next employer won't start until 2 months from now but I will get a valid BRP soon nonetheless.
Until the new job starts, can I do a 20 hours per week supplementary work with the old employer. My contract with them will be finished at that point. However, I will have a new tier 2 from the new employer.
Does this sound okay? I'm not really sure.

you shouldn't resign until you have your new visa. That means you are in full-time job with your current employer until you have your new visa and then you can resign and work your notice period if applicable. You current job cannot be your supplementary job.
If you have already left your job and then waiting for your new visa then thats a tricky one. You must be fully employed with one sponsor before you can do a supplementary job, if that's not the case then you cannot do a supplementary job
