Proof of Self-employment for EEA application

Hi Group,

My name is Markus and my question is regarding Self-employment with regards to EEA application. We have been together 4 years, lived together 2 years, been married 6 month. My current visa will be due for renewal in October 2019.

About My Wife: She is a beauty therapist, nationality German and she has recently been self-employed from Dec 2018, 3 months so far and these are the things she has to show as proof of her self-employment:

1) She is registered HMRC as self-employed (2 docs confirming her registration and her UTR)
2) She makes on average £1700 per month
3) she has her receipts for all appointment
4) All funds from her self-employment are visible on her Business bank statement.

The above is what she currently has as proof of self-employment. Also, because she is a newly self-employed, we do not have docs like Annual self-assessment tax return to HMRC has the time for this will be Jan 2020.

Please share your thoughts on the above, is there something more we could show in support of her self-employment status, is there something more that we can show or / maybe missing?
