Proof required for PR card after getting settled status

Hello, my name is Nicu (Romanian EU) and I just received settled status. At the same time, I brought my wife (who is Non-EU) to The UK via EEA Family Permit. I need to apply for her residence card and I found out that I can make her application online via my application for permanent residence card... Now I got our application ready and all the documents to support it (in my case, all my activity in the past 5 years). I worked all this time so I provided payslips, work contracts, tenancy agreements although for the first 1 year and a half I lived with friends... and I don't have anything to prove that... I do have paperwork sent to those addresses though...

My question is: I entered The UK in May 2014 and I only spent 2-3 months in total outside. I opened a bank account in November 2014 so I don't have 5 years of accounting history and I don't even kept bills as I did everything paperless but I have my bank statements since November 2014. Now, regarding the statements, do I need to print out absolutely all transactions and get someone from my branch to sign them or how do I do this?

Also, my settled status and the fact that me entering the country in May 2014 and the date I applied for NINo can be tracked down does not help enough? How should I go ahead with this. The reason why I am applying is because I want to get citizenship here when the time comes and I need to apply for my wife's residence card and I could do that for her via my application. Can you please help me?
