Getting engaged to an Albanian buy live in Greece atm

So like the title states I am a UK citizen but I have been living and working in Greece for the last 3 years. My fiance is Albanian I met him here working and we have been together for 2 1/2 years. He has a resident and working visa to be in Greece.
I dont know if I want to live in Greece forever so my question is if I marry him here in Greece, I would want my children born in Britain as legally if they were born in Greece it doesn't make them Greek. More importantly however I trust the healthcare in Britain I have been to hospital here in Greece and it was a terrifying experience!
So would he be able to get a visa to be present for the birth as my husband and possibly when our child gets to school age we might decide to settle in Britain as the education system is also better. So what visa would that need?
I've read a lot about fiance visas and having to marry after 30 days, but we aren't living in the UK right now. I love this man and when I dreamt of getting married I wanted the big shebang. I had a lovely romantic idea of being married in Greece because this is where we met and its no mans land for us both. It's not my fault I fell for a foreigner hah! I shouldn't have to compromise.

I just want to make sure I can give my family the best as that is most important out of all of this and what I would like to be able to do is even possible. I'd rather know my options now so we are not blind sided, as my mother is in the UK and getting older she will need me around and her healthcare. I love him but I have to be realistic on what kind of life I want to have.
