1. After she gets the visa extension, she'll be able to travel abroad (the fiancee visa often shows "multiple entry" but in reality it's single entry, and she'll likely be denied re-entry to the UK, even if the visa hasn't expired). Especially once you've applied online for the visa extension, you cannot travel abroad as the application is considered withdrawn once you leave the UK. For all of Europe, she'll need a visa - a valid Schengen visa will give access to all Schengen countries e.g. France, Spain, Italy. You have to apply at the embassy of your first entry, i.e. Italy if you're going to Italy first. It's relatively easy to obtain but just a hassle, you need proof of accommodation, proof of finances, return flight ticket etc. If she has no money and you're sponsoring her trip, all those documents must come from you with a letter of sponsorship. For more details check the website of whichever embassy you apply at.
2. She cannot work legally until the visa extension is approved - her National Insurance number will be generated and printed on the Biometric Residence Permit. Priority processing is currently suspended so you might have a wait of up to 8 weeks for the extension to be approved.
3. I'm sure your Filipino fiancee would hate being referred to as "Phillipino" !
