What will happen when my visa expires while waiting for the decision on my application?

Hello,

My visa (on my BRP card) expires on 5 Jan 2021. I made an application for my visa extension on 21 Nov and my appointment with UKVCAS is tomorrow. There is a possibility that the decision on my application is not made before my visa expires.

In this case, can I still legally stay in the UK? If so, where could I find the information on UK gov website?

As you have made an in time application I.e. before current visa or leave expires, you are covered by Section 3C which maintains same right as you have under current leave till the outcome or decision of the application you submitted.
