Should I include all 12 months bank statements? Yes off course, I will include all payslips. CAT B application since you are not up to 6months with current employer. Check that you meet both parts of requirements. Note that if wife is working and income meets the requirements with one employer, you can use her income and financial evidence and apply under Cat A which is more straight forward
4. I am also getting UC benefits and council tax reduction (My Mrs Name is only mentioned but not receiving any benefits). Would this impact on the result? No
5. My Mrs has already B1 so there is no need to do any English qualification. Correct
6. I am aiming to apply myself online due to financial issues. Is it easy process or I have to involve solicitor?
Easy process for straight forward situation. No need for solicitor, clarify any issues you are concerned or unsure about here.

Employer letter would not be a problem. Although I am on 0 hour contract but income requirements £18600 would be fulfilled.
Regarding evidence of cohabitation for past 2years by correspondences addressed, only bank statements sufficient? we both can order all statements which covers last 2 years. No. The sources needs to be from at least 3. Your letters from DVSA, DVLA, HMRC, NHS etc can be used.
Also, I have 2 bank accounts. for my current employer, I am using new different account but for previous jobs, I had other account. To Cover 12 months, can I use 5 months statements for 1 account and 7 months for other account where wages credited? Not a problem
We will be under CAT B. My Mrs is not working and I will submit my 12 months payslips from different employers.
