Hi there,
I have seen great content here and it's great to see many people providing such a valuable help on a public forum.

My wife has UK settled status as a spouse of an EEA citizen (she is Chinese).
Her biometric residence card has expired and it is not possible to apply for a replacement.
My question is simple: is there a way to travel abroad from UK and be able to prove your right to live in the UK in order to come back, for a non EEA citizen?

Here is what the government official page says on the topic
Replacement residence or permanent residence cards
You can no longer get a replacement residence card or permanent residence card.

If your card is lost, stolen, expired or damaged, you’ll need to apply to the EU Settlement Scheme.

If your passport has expired
You cannot transfer your card to a new passport.

You can still use your existing card if it’s valid, but when you travel you must also show both:

your new passport
your old passport

The answer is in the second line of the quote in your post.
If your card is lost, stolen, expired or damaged, you’ll need to apply to the EU Settlement Scheme.
As her card has expired, your wife would be issued with a BRP under the EU Settled Status scheme, which is not the same as a replacement BRC under the EEA Regulations.
