How are you doing?
Home office recommended using www.OANDA.COM for currency converter.
There are different options available “Interbank Rate, Typical Cash Rate: +4%, Interbank Rate: +1% ………etc...â€

On this link h[url]ttp://www.oanda.com/convert/classic[/url], u need to use the "Interbank Rate", they take last date rate of claimed period. Moreover calculate ur earning from point calculator http://www.ukba.homeoffice.gov.uk/pointscalculator , this will give u the exact one, Well they multiply the whole amount in ur currency by the rate of 1 Rs = xxxx pounds

If the last day of previous earning period falls on a Sunday, do they take Sunday into account or Friday or the next day i.e Monday.

Well the rates are available for sunday as well, so they will consider the sunday's rate.
