However, as you are not resident in the UK you are not required to pay tax so I guess you should not be paid via PAYE either.

As a personal example, I was made redundant in July and I still was able to see my Skilled worker visa as "valid" - including the right to work - in December. I never received a curtailment letter.
Once the employer reports termination to UKVI, it's sensible to assume that your visa is no longer valid, irrespective of what the system shows online.
You cannot switch a visitor visa to another type of visa in the UK.
