Questions regarding childs first Italian passport application (applying from Manchester, UK)

Hi all.

Our child was born in London and we had their birth registered with our Comune through the London Consulate.

Now we are looking to apply for my their first Italian passport.

However since their birth we have now moved to Manchester. I understand that we now need to apply through the Manchester consulate. Having read the forms on the website I have two main questions.
  1. I notice that it mentions in the form that should one of the partners be a non-EU citizen, they must sign the declaration in front of a consular officer. My partner is a non-EU citizen and would therefore need to do this. However, I am unsure on how I would find a consular officer to verify the sign? Do we just turn up at the consulate and ask for this sign as I don't think there is a specific appointment for this?
  1. For the authentication of the photograph it mentions that proof of occupation is required for any person signing the form. Firstly what is an example of an acceptable profession. Second, what should the proof of occupation be? Payslips, letter from employer, employment contract?

    If we don't know anyone suitable to sign there seems to be an option to reach out to an honorary consular agent. Who are the relevant persons to reach out to? There are a number of persons mentioned on the website but none seem to cover the Manchester area so we are a bit confused here.
Sorry for the long post, but I hope someone can help out. We reached out to the consulate through email several times but never received a response. Their phone lines also always seem to be busy so we are basically at our wits end trying to solve this. Thanks in advance for any help.
