You can apply for a visitor's visa in Irish Honorary Consulate in Karachi (They don't make decisions in the consulate over there. It comes to Dublin for decisions so make sure you have submitted all the documentation)

You need to submit:
1. Your marraige cert (in english and notarized)
2. Your passport copies of all pages
3. Your husband's passport copies of all pages (they will ask for original after the decision from Dublin is made to place visa in the passport)
4. Bank statement of your spouse showing enough funds (2-3000 euros is enough for visit purposes excluding airfare)
5. His employment/student letter (stating its for holiday purpose and he will be back in work/studies etc)
6. A covering letter stating that you guys are off for holidays/family visit (whatever the case maybe) to Ireland and will return etc.
The reason you need to submit all of the above is because you are living in Pakistan and not exercising your treaty rights (studying/working) in any other EU country yourself where its quiet easier to apply. Its pretty much the same process for French visa but France has a full fledge embassy in Islamabad where they issue visas there.

Now mind you when you applying for schengen visa (french) you do not need to submit bank statements etc as it will state in the application form that if you are family member of EU and traveling together hotel info/statement/job letter etc is not needed. (Ireland/UK are not part of schengen)
