Am I eligible to work in southern Ireland ?

I have ILR. Am I eligible to work in Cork which is in the south of Ireland.

When I checked what constitutes UK, it was only England, Scotland, Wales and Northern Ireland.

I don't think you can work in Ireland with ILR

You can work in Northern Ireland with your ILR which is part of UK (United Kingdom of Great Britain and Northern Ireland). However you can not work in Republic of Ireland (South) which is a completely different country with different immigration rules etc.

The Republic of Ireland is not part of the United Kingdom.

Not only is your ILR useless there, living in the Republic of Ireland could cause you to lose your ILR and/or break the continuity of UK residence for naturalisation purposes.

On the other hand, if you become a naturalised British citizen, you can live in the Republic of Ireland. However, unless you're married to a British citizen, or are eligible for registration as British, you should not plan to leave the UK until sworn in as a British citizen.
