Visitor Visa Refusal

Hi,
I would like to make a quick inquiry. I'm an Egyptian national. I stayed in the UK for 6 years as a PhD student and later as a post-study worker. My PSW visa expired on 18 November 2010. During my PWS stay, I was offered a post-doctoral visiting fellowship at the University of East Anglia for one year starting on 1st November 2010. Because my PSW visa was due to expire on 18 November, I left the country on the 14th, hoping that I would apply for a visitor visa in Cairo (Egypt) so I can travel back to the UK to carry out my visiting fellowship. In December 2010 I applied for a visitor visa for 6 months but my application was refused twice although I have presented all necessary documents to support my case. In the first attempt the reason given for refusal was that although I stated that I was employed, I failed to provide evidence of such employment. In the second attempt, I presented such evidence in the form of a letter from my employer (Mansoura University, Egypt). However, the visa was refused again as the visa officer was not satisfied that I demonstrated strong ties in my home country!
I couldn't appeal as my application didn't attract full rights to appeal. Consequently, I canceled my visiting fellowship and returned to my job. Now I need to apply for a visa in order to attend a conference in July. I received an acceptance letter from the conference and my employer will fund me partially. I'm very worried that they would refuse my visa again based on previous refusals. I need your advice. Someone advised me to attach a cover letter to my application in order to deal with previous refusal letters. I don't know what to write in this letter. I would greatly appreciate your assistance. I'm ready to send the refusal letters to whomever is willing to help.
