Calculating Time Outside UK for "Continuous Period"

Hello. This seems to be a very popular topic on this forum, but I can't find an answer to a very specific question I have about calculating days spent outside the UK.

When calculating the number of days I have been absent from the UK, should I be counting from date of departure to date of return, or only for whole days spent outside the UK?

For eg - if I fly to Sweden on Friday 27 May and return on Sunday 29 May, have I been absent from the UK for one day or for two days?

You don't count the day of departure or the day you arrive back in the UK as you're considered to be present at least for a part of each of those days.

what about weekends, bank holidays etc.. do we count those ?
